My Christmas Dinner

Well, this year I think I have grown up quite a bit as I took it upon myself to try my hand at cooking all the Christmas Day meals for my family. I won't lie, I was way more excited than I was scared that I would end up mistakenly poisoning my loved ones. I played it safe by making boiled yam and eggs for Christmas breakfast (I have to stick true to my Nigerian roots hehe) and a semi-traditional Christmas dinner that consisted of roasted chicken and roasted veggies with a side a stew (yeah, gravy is a touchy subject in my house lol).

When I saw this tuber of yam in my local Tescos when I was running around town like a lunatic trying to get the remaining ingredients I needed, I knew I just had to get it. Christmas breakfast was meant to be pancakes with an assortment of fruit but I literally could not remember the last time I had yam and egg so that obviously had to be rectified immediately. Was a bit tempted to scrap the traditional Christmas Dinner idea and just make yam porridge but I remained strong and stuck with my original plan. If you haven't tried boiled yam with a side of fried eggs you should give it a go. Boil the yam until it is soft (takes bout 30-40 mins) and then fry your eggs just the way you like 'em. I do not have a photo of what it ended up looking like as I was a bit overwhelmed and gobbled it all up. Taking a photo of it was the furthest thing from my mind haha.

 Washing, basting and stuffing the chicken was unbelievably the hardest thing I have had to this month... I think. I almost threw up as my imagination is known to torture me at times. I saw the chicken come to life mid-wash. I saw feathers grow out from its skin. I saw it walking around my counter top...like a headless chicken (ha!). I saw writhe around under my grip as I placed it in the roasting tray. Needless to say, I had to take quite a few breaks to comport myself but I got it done in the end. Thanks to Jamie Oliver's 'Perfect Roast Chicken' recipe and my , my roast chicken was well received.

And this is what my plate looked like once I attempted to carve the chicken. My presentation needs a little work but it still tasted yummy hehe. Just so you know, that is me in the background wearing the new spotty addition to my Comfort collection. That wonderful onesie was given to me by my lovely brother and sister for Christmas and I love it loads!
